8 Delicious Treats to Make for the Next School Fete

Cast your mind back to when you were a kid. Remember the excitement of cake days and school fetes? Thankfully, this beloved tradition is still going strong, and we’ve got your next one taken care of.

Today, we’re throwing it back to the good ol’ days, with recipes for all those iconic cake stall treats. Think chocolate spiders, honey joys and caramel slice, plus a few new favourites like cake pops and bliss balls. Just make sure you make extra for yourself!

1. Chocolate Crackles

These delicious, chocolatey morsels are easy to make and never fail to put a smile on the faces of little kids and big kids alike.

You will need:

  • 4 cups Rice Bubbles
  • 1 cup icing sugar
  • 1 cup desiccated coconut
  • 5 tbsp. cocoa powder
  • 250g Copha, melted

Method:

  1. In a bowl, mix all the ingredients together
  2. Spoon mixture into cupcake cases
  3. Refrigerate until set

2. Honey Joys

These iconic treats are sweet, crunchy and so easy to make that the kids could do it themselves.

You will need:

  • 90g butter
  • 1/3 cup sugar
  • 1 tbsp. honey
  • 4 cups cornflakes

Method:

  1. Preheat oven to 150°C
  2. Line a 24-hole cupcake/muffin pan with paper cases
  3. In a saucepan, melt the butter, sugar and honey until frothy
  4. Add cornflakes and mix well
  5. Work quickly and spoon the mixture into the lined cupcake pan
  6. Bake for 10 minutes
  7. Cool

3. Coconut Bliss Balls

After something a little healthier? These coconut bliss balls are packed with flavour and only require two ingredients. Too easy!

You will need:

  • 3 cups desiccated coconut
  • 2 cups pitted dates

Method:

  1. Add two cups of the coconut into a food processor with the dates
  2. Mix on a high speed for three to four minutes, stopping to scrape down the sides when needed
  3. Remove the mixture from the processor, rolling into small balls
  4. Roll each ball in the remaining cup of coconut

4. Caramel Slice

A little more work goes into these beloved treats, but trust us – it’s well worth it.

You will need:

  • 1 cup plain flour, sifted
  • ½ cup brown sugar
  • ½ cup desiccated coconut
  • 125g butter, melted (for the base)
  • 395g can sweetened condensed milk
  • 2 tbsp. golden syrup
  • 60g butter, melted (for the filling)
  • 125g cooking chocolate, chopped
  • 60g Copha, chopped

Method:

  1. Line a 28 x 18 pan and preheat oven to 180°C
  2. Combine the flour, brown sugar, coconut and 125g butter in a bowl, mix well, then press into lined pan
  3. Bake for 15 to 20 minutes, or until light golden
  4. Remove from oven and cool
  5. For the filling, combine the condensed milk, golden syrup and 60g butter in a saucepan. Cook over a medium heat, whisking as you go, for eight minutes or until golden
  6. Pour filling over cooked base, then bake for 12 minutes, or until firm
  7. Cool completely, then refrigerate for three to four hours, or until set
  8. For the topping, place the chocolate and Copha in a heat-proof bowl over a saucepan of simmering water and stir until melted
  9. Pour topping over caramel, then refrigerate until set and cut into squares

5. Chocolate Spiders

Three ingredients and 10 minutes of prep time is all it takes to make these iconic Aussie treats.

You will need:

  • 100g crunchy fried noodles
  • 2 tbsp. crunchy peanut butter
  • 200g cooking chocolate

Method:

  1. Microwave the chocolate and peanut butter until melted, mixing well to form a smooth paste
  2. Add the noodles and coat well with the chocolate and peanut butter mixture
  3. Spoon the mixture onto a lined tray and refrigerate until set

6. Vanilla Cake Pops

These cute, bite-sized treats can be decorated however you like and are sure to be a hit.

You will need:

  • 1 store-bought vanilla cake or packet-mix vanilla cake, prepared as per box instructions
  • 1 tub vanilla icing
  • 375g cooking white chocolate
  • Sprinkles
  • Lollipop sticks

Method:

  1. Crumble the cake in a food processor
  2. Pour in the icing and mix well
  3. Line a baking tray with baking paper and roll tablespoons of cake mix into small balls
  4. Place on the tray and chill in the freezer for 20 minutes
  5. Meanwhile, melt the chocolate by placing it in a heat-proof bowl over a saucepan of simmering water, ensuring the bottom of the bowl is not touching the water. Turn off the heat and leave the bowl sitting over the hot water
  6. Remove the cake balls from the freezer in batches of 12, pushing the lollipop stick about 1 to 2cm into the ball
  7. Dip each cake pop into the melted chocolate, cover with sprinkles and leave to set

7. Biscuit Wands

A snack that doubles as a toy? What more could a kid want? It doesn’t hurt that they’re delicious, too!

You will need:

  • 1 ½ cups butter, softened
  • 2 cups white sugar
  • 4 eggs
  • 1 tsp. vanilla extract
  • 5 cups all-purpose flour
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 20 paddle pop sticks
  • Star-shaped cookie cutters
  • Icing and sprinkles

Method:

  1. In a large bowl, cream the butter and sugar together until smooth, then beat in the eggs and vanilla. Stir in the flour, baking powder and salt
  2. Cover and chill dough for at least one hour
  3. Preheat oven to 200°C and line two baking trays with baking paper
  4. Roll out dough on a floured surface about 1cm thick. Cut dough into stars using cookie cutter and insert a paddle pop stick about halfway into each star
  5. Place cookies at least 2cm apart on the baking trays and bake for six to eight minutes
  6. Cool completely, then ice and decorate as desired

8. Marshmallow Rice Bubble Treats

Light, crispy and oh-so-moreish, these marshmallow rice bubble treats are as tasty as they are simple.

You will need:

  • 3 tbsp. butter
  • 1 tsp. vanilla essence
  • 4 cups miniature marshmallows
  • 4 cups Rice Bubbles

Method:

  1. Grease a 20 x 30cm pan with cooking spray or butter
  2. Melt the butter in a large saucepan over low heat. Add the vanilla, then the marshmallows, stirring until melted
  3. Add the Rice Bubbles, stirring until coated
  4. Quickly pour the mixture into the pan, using a sheet of baking paper to press the mixture down until flat and even
  5. Leave to set for two to three hours, then cut into squares

There you have it – the next few cake days and school fetes are well and truly covered!
